Maaren’s Magical Cookies

Combine:

1 C Butter

1 Egg

1 tsp Vanilla

1/2 C Sugar

3/4 C Packed Brown Sugar

Combine:

1 C Flour

1/8 tsp Nutmeg

1 tsp Cinnamon

1 tsp Baking Soda

1/2 tsp Salt

Mix wet and dry mixtures together

Add:

2 C Oatmeal

2 C Chocolate Chips

1 C Walnuts

Bake at 375 degrees for 8-10 minutes or until golden.

Kj’s Christmas Oatmeal Cookies

Combine:

1 1/4 C Packed Brown Sugar

1/2 C Unsalted Butter (at room temp)

1/4 C Milk

1 Egg

2 tsp Vanilla

Combine:

1 C Flour

1/2 tsp Baking Soda

1/2 tsp Salt

2 tsp Cinnamon

Mix wet and dry mixtures together

Add:

2 3/4 C Quick Oats

1 C Crazins

1 C Vanilla or White Chocolate Chips

1 C Nuts

Bake at 375 degrees for 10-12 minutes or until golden.

Chicken Sprout Salad

Combine any combo of the following:
Sprouts

Shredded Lettuce

Water Chestnuts

Shredded Chicken

Slivered Almonds

Toasted Sesame Seeds

Thin Rice Noodles or Ramen Noodles (Cooked, drained and cooled)


Dressing: (Go light on the dressing!!!!)

2 Tbs Soy Sauce

3 Tbs Rice Vinegar

1/4 C Oil (I use less)
2 tsp Sugar

Ground Ginger to taste

Oat Bran Muffins

Combine:
2 1/4 C Oat Bran
2 tsp Baking Powder
1/2tsp Salt
Combine:
2 Egg Whites or ½ C Apple Sauce
3/4 C Soy Milk
1/2 C Honey or Pure Maple Syrup
2 Tbs Saffron Oil or Olive Oil
Mix dry and liquid mixtures
Add:

1/4 C Dried Cranberries
1/4 C Flax Seeds
Heat oven to 425 degrees.
Make mini muffins (big muffins are too dense).

Crepes

Crepes:
3 eggs
2 Tbs Flour
1 Tbs Water
1 Tbs Milk
1 Tbs Oil
Beat thoroughly to eliminate any lumps. Heat frying pan with PAM or oil. Place a very small amount of batter in pan at a time, rolling pan to cover bottom of pan evenly. When making this recipe for a large group, estimate 2 eggs per person.

Breakfast Toppings:
Cream sauce (50% sour cream and 50% cream cheese)
Apple sauce
Berry sauce (frozen berries, a little sugar, corn starch)
Put toppings in bowls and let everyone make their own.

Dinner Toppings:
Cooked spinach
Cheese
Salsa or marinara
Roll up the crapes with spinach and cheese and bake for about 10 minutes. Serve with salsa or marinara over the top.

March 22-31, 2007: Visited Eric, Amy, Samuel and Nephew #2 (due this summer) in Fairbanks, Alaska. The temperature ranged from -20 to +26 degrees.

Chewy Ginger Snaps

Cream:

1 1/2 C Unsalted Butter

2 C Light Brown Sugar

Add:

1/2 C Unsulfered Molasses

2 Eggs

Combine:

4 1/2 C Whole Wheat Flour

4 tsp Ground Ginger

4 tsp Baking Soda

1 tsp Salt

Add dry mixture to butter mixture.

Blend in:

3 Tbs Fresh Grated Ginger

1 C Candied Ginger, Finely Chopped

Cover cookie sheets with parchment paper.

Pour handfuls of Turbindo Sugar onto a plate.

Roll cookie dough into SMALL ball, and roll in sugar.

Press cookie flat onto parchment paper.

Oven at 350 degrees.

Bake 10 minutes for chewy cookies.

Bake 12 minutes for crunch cookies.
